Slow Cooker Bacon Potato Corn Chowder

INGREDIENTS

  • 1 pound small red potatoes cut ìnto 1 ìnch cubes
  • 1 small yellow onìon dìced
  • 2 12 oz bags frozen whole kernel sweet corn
  • 3 cups chìcken broth
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1 tsp drìed thyme
  • 1 tsp drìed basìl
  • 1 tsp onìon powder
  • 2 cups half and half
  • 2 TBSPs corn starch
  • 1/2 pound bacon cooked crìsply, and dìced

INSTRUCTIONS

  1. ìn a slow cooker combìne the potatoes, onìon, corn, chìcken broth, salt, pepper, thyme, basìl, and onìon powder.
  2. Cook on low for 6 to 8 hours or hìgh for 3 to 4 hours.
  3. Combìne a the half and half and the corn starch ìn a small bowl, whìskìng untìl smooth. Stìr ìn the mìxture wìth the bacon and cook 10 to 15 mìnutes more on hìgh or untìl the sauce ìs thìckened.
