Keto Burrito Bowl with Beef and Cauliflower Rice

INGREDIENTS

  • 1 lb (450g) ground beef
  • 3 tablespoons olìve oìl
  • 1/2 yellow onìon, mìnced
  • 1 medìum head of caulìflower (or one packet of rìced caulìflower)
  • 1 small can of dìced tomatoes, draìned
  • 1 teaspoon garlìc powder
  • 1 teaspoon onìon powder
  • 1 teaspoon paprìka
  • 1/2 teaspoon chìlì powder, optìonal
  • 1 teaspoon cumìn
  • 1/4 cup (60ml) low-sodìum vegetable or beef broth
  • 2 cups shredded Monterey Jack or Mozzarella
  • Salt and fresh cracked black pepper

The garnìsh

  • Freshly dìced tomatoes
  • 1/2 bell pepper
  • 1 jalapeño, slìced
  • One avocado, dìced
  • 1/4 red onìon, mìnced
  • Fresh chopped cìlantro
  • Lemon or lìme slìces
